
These easy slow cooker recipes for truckers are great for a hands free method for making delicious meals. While you are out driving on the road a 12-volt slow cooker might be the solution to eating healthy. After a long day of driving, you want the feel of a home cooked meal.

Peach Salsa Chicken
Ingredients
- 2 Boneless Skinless Chicken Breasts, thawed
- 1/2 jar Peach Preserves (18 oz.)
- 1/2 jar Medium Chunky Salsa (16 oz.)
Instructions
- Cook chicken in slow cooker on high for 3 hours (covered)
- After 3 hours, drain juices from slow cooker
- Mix together Salsa and Peach Preserves
- Pour mixture over chicken, and cook on high for 30 more minutes (covered)
Root Beer BBQ Chicken
Ingredients
- 2 Boneless Skinless Chicken Breasts, thawed
- 9 oz. Honey Barbecue Sauce (half a bottle)
- 1/2 can of Root Beer (approx. 6 oz.)
- 1/8 Tsp. Salt
- 1/8 Tsp. Pepper
Instructions
- Cook chicken in slow cooker on high for 3 hours (covered)
- After 3 hours, drain juices from slow cooker
- Mix together BBQ Sauce, Root Beer, Salt and Pepper
- Pour mixture over chicken, and cook on high for 30 more minutes (covered)
Spaghetti and Meatballs
Ingredients
- 1 onion, chopped
- 1 16 oz. package frozen, fully cooked meatballs
- 1 26 oz. jar spaghetti sauce
- 1 15 oz. can diced tomatoes, undrained
- 1 and 1/3 cups water
- 2 handfuls whole wheat spaghetti pasta, broken into pieces
Instructions
- Place chopped onions in slow cooker. Top with meatballs and diced tomatoes.
- Add spaghetti sauce and stir gently. Add water to spaghetti sauce jar and add to slow cooker.
- Cover and cook sauce on low for 6-7 hours, or on high for 3.5 hours until onions are tender and meatballs are hot.
- Stir again, and add broken whole wheat spaghetti. Stir, and make sure the spaghetti noodles are covered by the liquid. Cover and cook on high for 20-25 minutes. Serve immediately.
Pork Chops
Ingredients
- Boneless pork chops
- 1 or 2 cans of any “Cream of ___” soup (Cream of Onion, Cream of Mushroom)
- Salt and pepper as desired
Instructions
- Put the pork chops in the slow cooker and add the canned gravy on top.
- Cook on low for 7-8 hours
- Add a little salt and pepper for flavor if desired
BBQ Ribs
Ingredients
- Approx. 3 lbs. Pork Backribs
- 1 bottle Barbecue Sauce (18 oz.)
- 1/8 tsp. Salt
- 1/8 tsp. Pepper
Instructions
- Cut rib rack in half
- Sprinkle ribs with Salt and Pepper, then place in slow cooker
- Pour BBQ Sauce over ribs in the slow cooker
- Cover slow cooker with lid
- Cook on High for 4 hours, or Low for 8 hours, or until done
BBQ Pulled Pork
Ingredients
- Approx. 3 lbs. Pork Tenderloin
- 1 bottle Barbecue Sauce (18 oz.)
- 1 can Coca-Cola (12 oz.)
- Optional: 1/2 white onion, slice
Instructions
- Place sliced onions on the bottom of slow cooker.
- Place Pork Tenderloin in slow cooker on top of sliced onions
- Mix together BBQ Sauce and Coke in mixing bowl or cup and stir well.
- Pour BBQ Sauce and Coke mixture over Pork, and cover Crockpot.
- Cook on LOW for 6 – 7 hours, or until done.
- Remove from slow cooker, and shred using 2 forks.
